Pesto Pasta
Yield: 4 servings
Ingredients
| 1 | pkg | (8 oz) uncooked angel hair pasta | |

| 6 | Tablespoons | olive oil | |
|
|
|||
| 2 | pkgs | (3 oz ea) cream cheese, cubed | |
|
|
|||
| 2 | cloves | garlic, minced | |
|
|
|||
| 16 | fresh basil leaves | ||
|
|
|||
| 2 | plum tomatoes, chopped | ||
|
|
|||
| 3 | Tablespoons | shredded mozzarella cheese | |
|
|
|||
| 2 | Tablespoons | grated Parmesan cheese | |
|
|
|||
Directions:
Cook pasta according to package directions.
For pesto, combine the oil, cream cheese, garlic and basil in a blender or food processor; cover and process until smooth. Drain the pasta and place in a serving bowl. Top with tomatoes and pesto; sprinkle with mozzarella and Parmesan cheese.
