Breakfast Burritos
Yield: 6 servings
Ingredients
| 1 | cup | frozen hash browns, shredded | |

| 1/4 | cup | onion, chopped | |
|
|
|||
| 2 | teaspoons | butter | |
|
|
|||
| 4 | eggs, well beated | ||
|
|
|||
| 1/4 | teaspoon | salt | |
|
|
|||
| 1/4 | teaspoon | pepper | |
|
|
|||
| 6 | (8 inch) flour tortillas, warmed | ||
|
|
|||
| 1/2 | cup | cheddar cheese, shredded | |
|
|
|||
Directions:
In a large skillet over medium heat, saute potato and onion in butter until tender. Pour beaten eggs into skillet; sprinkle with salt and pepper. Cook, stirring often, until mixture is set.
Divide mixture evenly between tortillas; top with cheese. Fold tortillas over egg mixture and serve at once.
