Easy Black Bean Soup
Ingredients
| 1 | Tablespoons | olive oil | |

| 1 | onion, chopped | ||

| 2 | stalks | celery, chopped | |
|
|
|||
| 2 | cloves | garlic, minced | |
|
|
|||
| 1 | Tablespoon | fresh ginger, chopped fine | |
|
|
|||
| 3 | cups | water | |
|
|
|||
| 2 | cans | black beans | |
|
|
|||
| black pepper to taste | |||
|
|
|||
Directions:
Heat oil in skillet. Saute onion until tender - less than 5 minutes. Add celery, garlic, ginger -- cook 1 to 2 minutes more to release flavors.
Add everything else and simmer 30 minutes or so to mix flavors and thicken a little.
